Chicken Biryani is very popular here in Abu Dhabi as most of the population comes from India. On the radio that I usually listen to, when I am in the car, some time ago  there was this joke:they asked the Indians which was their favorite city in India and they answered "Dubai". And I have to say there is a lot of truth in that, it brought a smile to my face.

Our nanny, Aruna, is also Indian. We have known her for more than six years now and she often delights us with dhal and Chicken Biryani, which we -but especially the little one at home- love so much. The little one of the house has an Indian soul, no doubt about it.



CHICKEN BIRYANI

Ingredients

diced skinless chicken breast

1 diced onion

chili pepper

fresh grated ginger

2 teaspoons garam masala

1 teaspoon cumin

1 teaspoon turmeric

1 tablespoon cardamom

1 garlic clove

salt

1 tablespoon seed oil

2 diced tomatoes

1/2 cup raisins

1 cup basmati rice

2.5 cups chicken broth (or hot water)


Procedure. Sauté chicken cubes in a tablespoon of oil for about 3-5 minutes. Turn the chicken well and add all the other ingredients except the rice and broth.

Finally, add the rice and broth.

Bring to a boil , lower the heat and cook for about 15 minutes.

Turn off and leave covered for about 10 minutes. Garnish with lime slices and almonds.
